Study identifies best colorants from blueberries By Stephen Daniels 09-Sep-2008
The blueberry pigment cyanidin glucoside may be the best option for food scientists to color products, according to a new study from Slovenia. A comparison of different compounds in blueberries called anthocyanins, responsible for the berry's color, showed that each anthocyanin had different degradation rates and identified cyanidin glucoside as the most stable natural colorant. “This study can be used in the field of natural colorants to determine the most stable blueberry anthocyanin in order to achieve the best food color stability,” wrote the researchers from Slovenia’s National Institute of Chemistry. “It can also be a very useful tool to determine the shelf life of a product.”

What a special coincidence that July is National Blueberry Month and the birthday month as well for the United States of America. As we imbibe in the fruit of the season (blueberries) we also celebrate the bold words of our forefathers who declared independence while laying the foundation for a new government. On July 4, 1776 the delegates from 13 colonies declared: “We hold these truths to be self-evident, that all men are created equal, that they are endowed by their Creator with certain unalienable Rights, that among these are Life, Liberty and the pursuit of Happiness.” It is with thanksgiving that we remember, celebrate and rejoice in the values that America holds dear.

Keep an Eye Out for Blueberry Festivals
In celebration of the 4th of July not one but TWO San Francisco Bay Area Farmers Markets observed Red, White and BLUEBERRY festivals. The South San Francisco Farmers' Market celebrated the sweet taste of summer with its first ever Red, White and Blueberry Fest on Saturday, July 1, at which they distributed free berry shortcakes from 9 am to 1 pm. And the Belmont Certified Farmers Market did likewise with their Red, White and BLUEBERRY Celebration on Sunday, July 2, featuring blueberry shortcakes to the first lucky attendees. Got that Blueberry Craving
Now is the time to enjoy all things blueberry! Some delicious ideas are found in the July 2006 issue of Gourmet magazine. Page 7 features Blueberry-Lime Ice Pops. The photo of the frosty, vividly blueberry-colored treat-on-a-stick looks so scrumptious that it almost makes one want to lick the page. The last feature on page 152 of the issue titled, “The Last Touch,” contains “blue heaven” a yummy, easy-to-follow selection of blueberry recipes.
Want to Make a Blueberry Grunt
So far, Bon Appetit’s summer issues are spilling over with blueberry recipes and almost edible photos of luscious blueberry treats. The June cover features a stunning red, white and blueberry cake the recipe for which is on page 121. In the July issue, Blueberry Month is recognized in a scoopable bowlful of Spiced Blueberry Grunt, recipe on page 117. And for anyone who has ever wondered, this issue explains the distinction between Blueberry Grunts, Blueberry Crisps and Blueberry Buckle!
Blueberries on the Bush
Next time you visit Copia, the American Center for Food Wine and the Arts, in Napa Valley, California take a look at the blueberry bushes growing in the garden. Visitors to Copia earlier this month told us they observed beautiful blueberries on the bushes. The blueberries are identified as “highbush.” Thank you Copia gardening staff for doing a great job! We love the blueberries.

Simply Blueberries – Keeping it Real
USHBC’s advertorial, “Bright, Bold, Beautiful Fields of Bountiful Blueberries…” was recently unveiled at the National Institute of Food Technologists (IFT) gathering in Orlando, Florida. The advertorial was featured in Food Technology magazine, Daily Insights (the show’s daily publication), and in the show directory.
The USHBC booth featured a display of blueberry ads along with various formats of blueberries for show and tell along with fresh blueberries for tasting. There were samples of products from Asia (with blueberries), research citations on blueberries, and blueberry bon bons (small bites of real blueberry in miniature cookies).
Manufacturers are encouraged to use real blueberries rather than less expensive, manmade blue-colored particulates. (There are a number of blueberry imitators in the marketplace. Look for products that contain substantial amounts of real blueberry – not something else!) Consumer demand is high and crop size continues to expand as new plantings come into production.

The USHBC theme was “a taste of the blues” and emphasized real blueberries at the Northern California IFT, May 2. The tabletop featured prototype samples for show-and-tell. In addition blueberry geleé (showcasing the flavor and color of real blueberry) and blueberry-flaxseed bars were provided along with formulas, annotated bibliography of blueberry health, antioxidants, nutrition, storage, and a suppliers guide were provided.

Opportunities for Blueberries Abound Sales reached $79 billion in the U.S. consumer packaged goods health and wellness retail sector in 2005, reports The Natural Marketing Institute (NMI). Blueberry Pies Baked for a Good Cause Mary Zimmerman is called, “The Pie Lady.” The 72-years-old Winona woman has 1,000 pies under her belt – all baked for a good cause – to aid tsunami victims and for hurricane relief. She bakes apple, apple caramel, cherry, sour cream and our favorite, blueberry. It began in December 2004 when the tsunami decimated Sri Lanka in Southeast Asia. Sugar Content and the Blueberry The USDA Nutrient Data Laboratory released a special interest table providing data for the added sugar content of foods. According to the USDA website, “There is growing scientific interest in the levels of added sugars in the diet, especially as it relates to research concerning the relationship between sugar intake and health and obesity prevention (Dietary Guidelines Advisory Committee 2005).” Blueberries were among the 2038 foods investigated across 23 food groups.

Yummy Blueberry Morning Muffins "Blueberry and oatmeal-maple are two of the best" morning muffins served at Bette's Oceanview Diner (Berkeley, CA) according to Miriam Morgan in the San Francisco Chronicle's Food section, F2 (Feb. 1, 2006). Baked by Bette Kroening, these muffins are described as "too good to take for granted. They have the right balance of crunchy outside to tender inside, with a texture at once light and substantial, neither bready or cakey," reports Morgan.

A journal article in the January 28, 2006 issue (Volume 367, Number 9507) of The Lancet, a UK medical journal, reports on the beneficial effect that consuming five or more daily servings of fruits and vegetables provides in stroke prevention. The research at St. George's University in London looked at eight studies involving 250,000 people. The risk of stroke was 11 percent lower for people who consumed three to five servings of fruits and vegetables daily compared to those consuming fewer servings. Further it was learned that those consuming more than five daily servings of fruits and vegetables had a 26 percent lower risk of stroke! Fruit and Tree Nuts Yearbook US fruit consumption totaled 285.19 lb. (fresh weight equivalent) per person in 2004 reports the USDA Fruit and Tree Nuts Yearbook, FTS-2005, October 2005. Of that amount, Americans drank 8.2 gal. of fruit juice, consumed 101.97 lb. fresh fruit, 2.29 lb. dried fruit, 3.89 lb (processed weight) frozen fruit and 14.77 lb. canned fruit per capita. According to Table F-2 in the report, in the last 10 years fresh blueberry consumption has doubled from 0.27 lb/person in 1994 to 0.53 lb. in 2004. Healthy Ingredients Japan (October 5-7) Tokyo Big Sight Exhibition Center -- The USHBC booth highlighted US and Asian manufactured products containing blueberries. Folks were curious to see the various items on display. Several attendees proudly pointed to their company’s product. One exhibitor added his product: cultivated blueberries in honey. Another cookie manufacturer shared his blueberry “senbei” crackers with us (below). Senbei are traditional sweet crackers usually served with tea. This was a twist on the traditional! (The company president is shown at right with blueberry “senbei” and the package with “Eating Supplement” on the label is shown center.) HI Japan is the annual showcase and meeting place for Japanese companies with an interest in nutraceuticals, health, functional and organic foods.
Increase in Consumer Fruit Consumption Food Dynamics (9-30-05), a publication of USDA that provides up-to-date information on consumer behavior and retail food market conditions, reports that "the most notable increases in food purchases were for fruits and noncarbonated drinks" when comparing the 1st quarter of 2004 with the 1st quarter of 2005. Consumers increased overall fruit purchases by 7 percent. According to the publication, a major driver of consumer purchases during that period was convenience. Blueberries' Polyphenol Benefits Natural Health magazine (Sept. 2005) includes blueberries in the article, "Anti-inflammatory diet: the right foods can protect you from Alzheimer's, obesity, heart disease and even premature aging." According the article, polyphenols found in blueberries "contain flavonoids called anthocyanins that protect against oxidative damage." Blueberry Sushi Wraps Agricultural Research Service (Albany, Calif) reports on an innovative idea -- sushi wraps made with blueberries! The wraps are made using infrared drying and other leading-edge technologies, according to Processed Foods Research Unit Head, Tara H. McHugh. They offer an alternative to traditional seaweed wraps for American-style sushi delicacies, which may be sized, shaped and sliced like typical sushi but made with innovative ingredients. Wraps are produced as soft, pliable sheets. Blueberry Promotion in South China USHBC and the USDA Agricultural Trade Office in Guangdong, China honored bakers from Guangzhou Province who have participated in a five month series of training seminars at the Sino American Bakery School in Guangzhou (South China) The seminars included a two day seminar by Chef John Hui, CPC of Caesars Palace in Las Vegas, who wowed bakers with his blueberry creations. Blueberry Jamming The food page staff at the San Francisco Chronicle calls blueberry jam “summer in a jar.” Determined to find the blueberries of all the best of them, they conducted a tasting of a dozen products labeled jam, preserves or conserve. Their top ranked were D’Arbo, an Austrian conserve; Crofter’s, an organic conserve; and Trader Joe’s preserves which featured lots of berries. The “Special 1000th Issue” of Reader’s Digest (Aug. 2005) features an article in the Living Trends section titled, "Meals that Heal," which explains how the simple choices of what we choose to eat can have a powerful effect on health and well being. “Reach for a menu instead of medicine,” says the subheading for more energy, better sleep, heart health and relaxation. The Harvard Medical School study is also described in a Shape article entitled, 5 Power foods: boost your nutrition and maintain you ideal weight by getting more of these superstar foods into your meals (Jan. 2005). Berries are noted as the first power food in the article. Blueberries Swing into the Big Blue Easy at the IFT The theme of the US Highbush Blueberry booth at the recent National Institute of Food Technologists (IFT) expo and meeting in New Orleans, July 17-19, was “Play the Blues!” In keeping with the New Orleans theme, there were Mardi Gras beads (all-blue in the shape of blueberries), a blueberry dining guide of restaurants that serve blueberries in the New Orleans area, as well as a booklet of recipes by well known chefs in New Orleans. It was exciting to see that blueberries are a cool fruit accepted and served with pride by discriminating New Orleans chefs. Information sheets covering blueberry formats, health, nutrition and antioxidants were provided to attendees.
